We all scream for ice cream
The first time I heard the term "lactose intolerant" was watching the infamous movie, When Harry Met Sally. But even then, I never thought about it or it's repercussions.
It seems that lately, everyone around me is lactose intolerant to some degree. My cousin suddenly became lactose intolerant a few years ago. A co-worker is very lactose intolerant after coming off an extreme vegan diet (no dairy). And of course there's my son, Buddy, who was born lactose intolerant.
I can't say why people are suddenly "becoming" lactose intolerant. One could argue it's the "hormones" in the milk. Or there's the whole allergies theory about how our bodies are now fighting anything they can because there are no real germs to fight. You can even argue that it's an evolutionary thing.
Whatever the reason though, the fact remains that ice cream is soooooo good! Before going on my lactose-free diet for nine months, I would never have thought twice about it. But having been there, I am sensitive to people who "suffer" from it. I can sympathize.
Of course there are wonderful substitutes. Rice Dream wasn't half bad once you got over the "cardboard' aftertaste. And frozen Soy is actually a very nice treat! There are also fruit sorbets and the ever popular snow cone. But, and this is my opinion, you simply cannot replace the sinful taste of ice cream. That rich, creamy-ness...
Mmmm... anyway, so, if you're lactose intolerant, I feel for you, I really do.

I keep forgetting to tell you about Rice Dream. Not Rice CREAM, Rice Dream - different, and usually organic. During my short stint as a lactose intolerant mom, this was my ice cream substitute and it was far better than any of the other substitutes I tried. I still like it better than regular ice cream. It might be worth a try, especially now that it's hot! I feel for you - I only had to deal with my little one having the intolerance for about 9 months. In the beginning I went for WEEKS only eating chicken, rice and water. That's it! Then we introduced things bit by bit, and dairy seemed to bring out the exorcist in her. After that, it was a cheese-less Rice Dream, but we're both on a no-restriction diet now. (My pants think I should rethink that diet and add a few restrictions, though) Hope you can find RD in the stores near you, and I hope you like it!
