The Best Pumpkin Chocolate Chip Cookies Ever!
I love going to Fall and Winter fairs. At one particular fair I once attended there was a mom and daughter team selling I can't remember what. As their way of enticing you to their table though, they also had pumpkin chocolate chip cookies. There were three to a bag and they just handed them over for fifty cents a pack. As my weakness for anything pumpkin took over, I walked over to the table and got some cookies. Ever since then, I've been hooked. What's better than my two favorite things together in one delicious cookie?!
Of course, I didn't think to get the recipe from her. Instead I had to do some research and finally found a recipe that came close to those cookies. I am about to share it with you here.
Everywhere I take these cookies, I always get asked for the recipe, always. So, get ready to be famous.
The Best Pumpkin Chocolate Chip Cookies Ever!
(I borrowed this graphic from AllRecipes.com - I haven't had time to make my own cookies yet to take a photo... They look exactly like this though, and they taste even better than they look!)
Preheat oven to 350 degrees F
1 c. granulated sugar
1 c. pumpkin
1/2 c. oil (corn or canola - not olive)
Beat these three together.
Add one egg
2 c. flour
2 tsp. baking powder
1. tsp. cinnamon
1/2 tsp. salt
sift these four together
1 tsp. baking soda, dissolved in 1 tsp. milk
1 tsp. vanilla extract
1 c. chocolate chip cookies
Beat sugar, pumpkin, and oil with electric mixer. Add egg, beat.
Add sifted ingredients to pumpkin mixture.
Stir with baking soda/milk mixture. Add vanilla extract and chocolate chips. Stir (not mix).
Drop by tsp. onto ungreased cookie sheet. Bake 350 degrees F for 8-10 minutes.
Yields 3 1/2 dozen.
If like these cookies to be really moist. To accomplish this, after cooling, store cookies in plastic containers overnight. This makes them soft; yummy. If you like a harder cookie, you can store them in a cookie jar or box after cooling.
Enjoy! Let me know how you liked them!
I'm posting this recipe for two meme's today, for Lisa's Tempt My Tummy Tuesday and for LivingLocurto's ongoing Halloween Blog Party which is still going on until the 31th!

Sounds fabulous. I, too, have a weakness for pumpkin. I made a FABULOUS Chocolate Pumpkin Cheesecake a few years ago...haven't made it since, though, due to the insane number of calories. I even have a Rachael Ray recipe for Pumpkin Penne. Yummy! And for those of us watching our waistlines, there's a Hungry Girl recipe with only 2 ingredients: a can of pumpkin and a box of devil's food cake mix. Awesome! Okay...and maybe it's time for me to write my OWN pumpkin post. *slinking away*
